Frozen Vegetable Stir-Fry

Prep Time: 5 mins    Cook Time: 5 mins   Total Time: 10 mins

Ingredients

  • 2 tablespoons soy sauce

  • 1 tablespoon brown sugar

  • 2 teaspoons peanut butter

  • 2 teaspoons garlic powder

  • 2 teaspoons olive oil

  • 450gm package frozen mixed vegetables

Directions

  • Combine soy sauce, brown sugar, peanut butter, and garlic powder in a small bowl.

  • Heat oil in a large skillet over medium heat. Add frozen mixed vegetables; cook and stir until just tender, 5 to 7 minutes.

  • Remove from heat and fold in soy sauce mixture.

Cheesy Ramen Noodles

Cook Time: 5 mins    Total Time: 5 mins

 

Ingredients

  • 2 cups water

  • 1 packet any flavor ramen noodles

  • 1 slice cheese

 

Directions

  • Gather all ingredients.

  • Bring water to a boil in a saucepan. Add ramen noodles and cook until tender, about 2 minutes.

  • Pour out water, then stir in seasoning packet and cheese until well blended.

Haystacks

Prep Time: 5 mins   Cook Time: 10 mins  Total Time: 15 mins

 

Ingredients

  • 2 cups kidney beans, cooked

  • 1 teaspoon salt

  • 2 tablespoons chili powder

  • 1 teaspoon ground black pepper

  • 1 (14.5 ounce) package corn tortilla chips

  • 1 head iceberg lettuce - rinsed, dried, and shredded

  • 2 large tomatoes, chopped

  • 1 green bell pepper, chopped

  • 1 onion, chopped

  • 1 (10 ounce) can chopped black olives

  • 1 carrot, shredded

  • 1 cup shredded Cheddar cheese

  • ½ cup sour cream

  • 1 cup salsa

 

Directions

  • In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.

  • To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese. Top with salsa and sour cream.
